Well hello there,
Here are five little thoughts I want to share with you as we move into the weekend.
Because life is made out of little moments well honored, and sometimes shared.

1. Just so you know, I welcome your tears. There is no need to hide your sadness or push it away for happier things Tears are a holy sacrament to the grace of letting go. Happiness will come and will be so much sweeter when it isn't having to cover for something else. I am tucking this one away to remember for myself as well.
2. the.korean.vegan on Instagram (and TicTok but I am not on TicTok). Exquisite storytelling mostly focused on her immigrant family and the power of food to connect us to ourselves and lineage. I'm not vegan and it doesn't keep me from shedding a tear or two in the best way over her stories.
3. What do you want a meaning for? Life is a desire, not a meaning!- Charlie Chaplin. This shifts me from trying to find the right life to feeling into the life I am living.
4. Homemade granola has become a go to in my baking rotation. It is based on of a favorite our local grocery store makes. I got tired of the price so I've engineered my own version I like even better. Simple and so delicious. Bonus, I can adapt with what I have on hand. Less sweet, more sweet, honey instead of brown sugar or maybe maple syrup, added dried fruit or nuts, simple or complex, it all works.
- 1/2 c-ish coconut oil
- 1/2 c-ish brown sugar
- zest and juice of one orange
- cinnamon, lots
- fresh grated nutmeg, yes fresh grated is so worth the effort
- 1-2 tsp. vanilla extract
- 3-4 cups rolled oats
Put everything except the oats in a sauce pan over medium heat, stir occasionally until the coconut oil is melted and the brown sugar is dissolved.
Mix into the oats and turn onto a sheet pan lined with parchment paper. Spread evenly.
Bake at 300 degrees until browned, about 20-30 minutes, stirring once.
Let cool before eating and/or storing.
Feel feel free to remix, adjust, and add as you wish. Dried cranberries are adding a nice wintry tang these days for me.Toasted almonds are amazing, shredded coconut doesn't make me mad. You get the picture. Let me know if you try it and what you think.
